Which app should I use to make sure my Yeelight Ceiling Light has the latest firmware update? MiHome or Yeelight?
And to which server should they be connected to?

MiHome and Yeelight share with the same server, Yeelight are only support devices made by Yeelink while Mihome support more devices. Both of them are ok for Yeelight Ceiling light.
I recommend you select the server which is near to you. And if you want to use Google home/ Alexa/IFTT, please select servers except China Mainland.
